Salt and Pepper Chicken

This chicken is so delicious and keeping it wrapped in aluminum foil while it's cooking keeps it from going dry while it's in the oven.



2 large chicken breasts
2-3 T butter, unsalted (softened, not melted)
salt and pepper to taste


Line a pan with aluminum foil with enough excess foil to eventually cover the chicken.
I like to dry my chicken with a paper towel before cooking.
Lightly butter the aluminum foil add chicken breasts, butter the tops of the breasts and add seasoning.
Pop it in the oven at 450° for 20-30 minutes depending on your oven and the thickness of the breast you may need more or less time to cook the chicken. For safety you can always use a meat thermometer, you would want to insert the thermometer into the thickest section of the breast you want a reading of 165°

This recipe fed a family of four. I served the chicken with veggies and my fluffy mashed potatoes.
