Yellow Cake Cupcakes

My husband the kids and I are spending some time at his parent's house, and I took over the kitchen to make some cupcakes for Independence Day. I love cooking from scratch, I think cakes from scratch taste better and they are easy to make, and as long as you follow the ingredients list, they are pretty hard to mess up.

I love my mother-in-law's electric mixer it's a Bosch Universal and the right side of it has an area for a blender, too. Pretty sure I need to make an ice drink just so I can see how it works!

These cupcakes are a little denser than your average store bought cupcakes but they are also more delicious

Yellow Cake - Cupcakes

  • 2 1/2 Cups Flour
  • 3 Teaspoons Baking Powder
  • 1/4 Teaspoon Salt
  • 1 1/4 Cups Sugar
  • 3/4 Cup Butter, softened
  • 2 Teaspoons Vanilla
  • 3 Eggs
  • 1 Cup Milk
Preheat your oven to 350°. Cream together the butter and sugar. Add the vanilla and eggs. In a separate bowl mix all the remaining dry ingredients. The batter will be thicker than most cake batter, this makes a denser cake. Add in small increments (back and forth) the milk and flour mix. Scoop batter into prepared cupcake tins. Bake for 12-15 minutes depending on your oven.
